Cakes with Southern Charm - Texas Sheet Cake

TEXAS SHEET CAKE - Also known as funeral cake. The Texas sheet cake is almost as legendary as cattle drives, barbeque and the Alamo. Made famous by wives and mothers across the south.  This chocolate sheet cake is moist and full of rich chocolate flavor. Cut into cubes and served on their own, or layered with frosting and sprinkles or chopped nuts, these versatile desserts will help you celebrate in style.

Wrapped Tube (10 oz.) Ingredients: Wheat Flour Enriched (Niacin, reduced iron, thiamine, mononitrate, riboflavin, folic acid), Malted Barley Flour, Fair Trade Majestic Dutch Cocoa Powder, Baking Powder, Orange Vanilla Sugar (special pure orange extract [alcohol, water, and orange oil], and Vanilla Extract [vanilla, water, propylene glycol, and caramel color]) and Kosher Salt. Pour into: 8x12 sheet cake pan.

Recipe

Preheat oven to 350f.   You will need
1/2 cup (1 stick) butter,    2 eggs, 
1/4 cup sour cream,
1/2 cup hot coffee or water
Sift cake mix into a large bowl.  Melt the butter and chocolate together in a  saucepan or double boiler over low heat.  Stir frequently to make certain the chocolate doesn't scorch.  Fold in eggs and remove the pan from heat. Blend the mixture in with the dry ingredients.  Slowly pour in the sour cream and coffee.  Pour and scrape the batter in to a 8x12" sheet pan that has been lined with parchment. Bake the cake for 20 minutes.  Remove from the oven 
and cool.
