Ingredients: 16 oz. Compostable Sugarcane Box - Sir Galahad Artisan Flour (American Hard Wheat Flour, Niacin, Reduced Iron, Thiamin Mononitrate, Riboflavin, Folic Acid, Malted Barley Flour),  Kosher Salt, and Sugar.

Use 1 package for a small loaf

• 1 Package Harvest Wheat Mix
• 3/4 cup water
• 1/8 tsp instant yeast (We love Red Star Platinum)

Double this recipe when using 2 packages for a large loaf.

Combine the water and yeast and let stand for 5 min. Add the Harvest Wheat Mix and stir until no dry flour remains. The dough will be sticky.
Cover and let rest at room temperature for 30–60 min. Refrigerate for 12–24 hours.
Remove from the refrigerator and let stand for 30 min. Place the dough on a lightly floured surface. Gently stretch and fold it into a round loaf without pressing out all the air. Place seam-side down on a floured towel, cover and let rise in a warm place for 1½–2½ hours, until noticeably puffy. Preheat the oven and a covered oven-safe pot to 475°F for 30 min. Carefully place the dough in the hot pot with the seam facing up. Cover and bake for 40 min.

The bread is done when the crust is browned and the center reaches
200°F. For a darker crust, uncover and bake for an additional 5–15 min. Cool on a wire rack for at least 1 hour before slicing.

This recipe makes a crusty bread with a soft inside.  If you like your crust soft put a damp tea towel over the pot and then the lid back on the pot.  Allow it to sit this way for 30 minutes.
