Gourmet Brownies - Caramel (GF)

My college friend Honey told me about her parents' Halloween party in the early 70's, where a neighbor showed up with a pan of caramel brownies that changed everything. The neighbor had melted down a bag of Kraft caramels and swirled them into her brownie batter, creating ribbons of gooey sweetness throughout the rich chocolate base. It was pure genius – nobody in that New Orleans neighborhood had thought to combine those chewy wrapped caramels with homemade brownies before. The treats disappeared faster than the Halloween candy, with kids and adults alike going back for thirds. When Honey shared this story with me , I had to try the recipe myself, and that simple idea became my go-to dessert for every potluck after.

CARAMEL BROWNIE MIX (GF) - Wrapped Tube Ingredients: Rice, Arrowroot and Tapioca Flours,  Fair Trade Majestic Dutch Cocoa Powder, Kraft Caramel Bits (sugar, corn syrup, and skim milk, combined with palm oil, butter, salt, mono- and diglycerides, and soy lecithin), Baking Powder, Orange Vanilla Sugar (special pure orange extract [alcohol, water, and orange oil], and Vanilla Extract [vanilla, water, propylene glycol, and caramel color]) and Kosher Salt.

Preheat oven to 350f.
You will need
4 oz unsalted butter
2 eggs
Sift brownie mix into a large bowl.  Melt the butter and chocolate together in a  saucepan or double boiler over low heat.  Stir frequently to make certain the chocolate doesn't scorch.  Fold in eggs and remove the pan from heat. Blend the mixture in with the dry ingredients.
Pour and scrape the batter in to a 8x8" pan that has been lined with parchment.  Bake the brownies for 30 minutes.  Remove from the oven  and cool.
